Damascus San Mai Chef
This knife was forged from two separate damascus patterns, combined into one. San mai is basically a sandwich. The bread of this sandwich was a bold 1080 twist pattern, and the filling was a 15N20 dense twisted pattern. That is why after forging and grinding the spine of the knife has a lot of black in the pattern, and there is a lot of silver at the edge. The handle of this beauty is western myall burl from Australia, and the bolster is vintage linen butterscotch micarta. The blade is about 6.5 inches long, perfect for all kitchen tasks. Iām thrilled with the pattern on this guy and the handle is a lovely pair with it.
